CHOCOLATE PECAN TURTLE CLUSTERS
Ingredients:
- For the Caramel:
- 1 cup granulated sugar
- 1/4 cup unsalted butter (cut into pieces)
- 1/2 cup heavy cream
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- For the Clusters:
- 2 cups pecan halves (toasted, if desired)
- 2 cups chocolate chips (milk, dark, or semi-sweet)
- Sea salt (optional, for sprinkling)
Instructions:
Step 1: Make the Caramel
- In a medium saucepan over medium heat, combine the granulated sugar and a few tablespoons of water. Stir until the sugar is dissolved.
- Continue to cook without stirring until the sugar turns a deep amber color, about 8-10 minutes.
- Carefully add the butter; the mixture will bubble. Stir until combined.
- Slowly add the heavy cream, stirring constantly until smooth. Remove from heat and stir in salt and vanilla extract. Let the caramel cool slightly.
Step 2: Prepare the Pecan Clusters
- Line a baking sheet with parchment paper or a silicone mat.
- In a mixing bowl, combine the toasted pecans and a few tablespoons of caramel, mixing to coat the pecans.
- Drop a heaping tablespoon of the caramel-coated pecans onto the prepared baking sheet, spacing them a few inches apart.
Step 3: Drizzle with Chocolate
- In a microwave-safe bowl, melt the chocolate chips in 30-second intervals, stirring in between until smooth.
- Drizzle the melted chocolate over the pecan clusters, covering them well.
- If desired, sprinkle a little sea salt on top of the chocolate for added flavor.
Step 4: Set the Clusters
- Place the baking sheet in the refrigerator for about 30 minutes to allow the chocolate to set.
- Once set, remove the clusters from the parchment paper and store them in an airtight container.
