CHOCOLATE PECAN TURTLE CLUSTERS

Ingredients:

  • For the Caramel:
  • 1 cup granulated sugar
  • 1/4 cup unsalted butter (cut into pieces)
  • 1/2 cup heavy cream
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • For the Clusters:
  • 2 cups pecan halves (toasted, if desired)
  • 2 cups chocolate chips (milk, dark, or semi-sweet)
  • Sea salt (optional, for sprinkling)

Instructions:

Step 1: Make the Caramel

  1. In a medium saucepan over medium heat, combine the granulated sugar and a few tablespoons of water. Stir until the sugar is dissolved.
  2. Continue to cook without stirring until the sugar turns a deep amber color, about 8-10 minutes.
  3. Carefully add the butter; the mixture will bubble. Stir until combined.
  4. Slowly add the heavy cream, stirring constantly until smooth. Remove from heat and stir in salt and vanilla extract. Let the caramel cool slightly.

Step 2: Prepare the Pecan Clusters

  1. Line a baking sheet with parchment paper or a silicone mat.
  2. In a mixing bowl, combine the toasted pecans and a few tablespoons of caramel, mixing to coat the pecans.
  3. Drop a heaping tablespoon of the caramel-coated pecans onto the prepared baking sheet, spacing them a few inches apart.

Step 3: Drizzle with Chocolate

  1. In a microwave-safe bowl, melt the chocolate chips in 30-second intervals, stirring in between until smooth.
  2. Drizzle the melted chocolate over the pecan clusters, covering them well.
  3. If desired, sprinkle a little sea salt on top of the chocolate for added flavor.

Step 4: Set the Clusters

  1. Place the baking sheet in the refrigerator for about 30 minutes to allow the chocolate to set.
  2. Once set, remove the clusters from the parchment paper and store them in an airtight container.
