Crab and Shrimp Seafood Bisque
Ingredients:
- 200g crab meat (lump or shredded)
- 200g shrimp, peeled and deveined
- 2 tbsp butter
- 1 onion, finely diced
- 2 garlic cloves, minced (optional for added flavor)
- 1 carrot, diced
- 2 celery stalks, diced
- 1 cup diced tomatoes (canned or fresh)
- 4 cups seafood stock or fish broth
- 1 cup heavy cream
- 1 tsp paprika
- 1 tsp Old Bay seasoning (optional)
- Salt and pepper to taste
- Fresh parsley or chives for garnish (optional)
- Lemon wedges for serving (optional)
Instructions:
- Sauté the Aromatics: In a large pot, melt the butter over medium heat. Add the diced onion, carrot, and celery (and garlic if using) and sauté until the vegetables are soft, about 5-7 minutes.
- Add the Tomatoes: Stir in the diced tomatoes and continue to cook for another 2-3 minutes.
- Incorporate the Stock: Pour in the seafood stock and bring the mixture to a simmer. Allow it to cook for about 15-20 minutes to deepen the flavors.
- Blend the Base: Using an immersion blender, blend the soup until smooth (or blend in batches in a regular blender). Be careful if using a regular blender, as the soup will be hot.
- Add the Shrimp and Crab: Return the blended soup to the pot and stir in the shrimp and crab meat. Add the paprika, Old Bay seasoning, salt, and pepper. Simmer for an additional 5-7 minutes, or until the shrimp are cooked through.
- Finish with Cream: Stir in the heavy cream and heat until just warmed through. Adjust seasoning if necessary.
- Serve: Ladle the bisque into bowls and garnish with fresh parsley or chives. Serve with lemon wedges for an extra burst of flavor, if desired.
