Crockpot Pineapple Barbecue Meatballs

Ingredients:

  • 1 pound frozen meatballs (beef, turkey, or chicken)
  • 1 cup barbecue sauce (your favorite brand)
  • 1 cup pineapple chunks (canned, drained or fresh)
  • 1/4 cup soy sauce
  • 1 tablespoon brown sugar (optional)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon ground ginger (optional)
  • Green onions, chopped (for garnish)
  • Sesame seeds (for garnish, optional)

Instructions:

  1. Prepare the Slow Cooker:
  • Spray the inside of your slow cooker with non-stick cooking spray or lightly grease it to prevent sticking.
  1. Combine Ingredients:
  • In a large bowl, combine the barbecue sauce, pineapple chunks, soy sauce, brown sugar (if using), garlic powder, onion powder, and ground ginger. Mix well.
  1. Add Meatballs:
  • Place the frozen meatballs into the slow cooker. Pour the pineapple and barbecue sauce mixture over the meatballs, ensuring they are well coated.
  1. Cook:
  • Cover the crockpot and cook on low for 4-6 hours or on high for 2-3 hours, or until the meatballs are heated through and cooked to your liking.
  1. Serve:
  • Once cooked, gently stir the meatballs to coat them in the sauce again.
  • Serve them on their own as an appetizer, or over rice, or in a sandwich for a main dish.
  1. Garnish:
  • Sprinkle with chopped green onions and sesame seeds before serving for added flavor and presentation.

Tips:

  • You can make your own meatballs by mixing ground meat with breadcrumbs, egg, and seasonings if you prefer homemade.
  • This recipe is easily adjustable; feel free to add vegetables like bell peppers or onions for extra flavor and nutrition.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.

Enjoy your Crockpot Pineapple Barbecue Meatballs! They’re sure to be a hit with family and friends.
