Ground Beef Mongolian Noodles

Ingredients:

For the Noodles:

  • 8 oz (225 g) noodles (egg noodles, ramen, or any preferred type)
  • 2 tablespoons vegetable oil

For the Ground Beef Mixture:

  • 1 pound (450 g) ground beef
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, minced
  • 1/2 onion, thinly sliced
  • 1 bell pepper, sliced (optional)
  • 2 green onions, chopped (for garnish)

For the Sauce:

  • 1/4 cup soy sauce
  • 2 tablespoons oyster sauce (optional)
  • 2 tablespoons brown sugar or honey
  • 1 tablespoon sesame oil
  • 1 teaspoon crushed red pepper flakes (optional, for heat)
  • 1 tablespoon cornstarch mixed with 2 tablespoons water (to thicken, optional)

Instructions:

  1. Cook the Noodles:
  • Cook noodles according to package instructions. Drain and set aside.
  1. Prepare the Sauce:
  • In a small bowl, mix together soy sauce, oyster sauce, brown sugar, sesame oil, and red pepper flakes. Set aside.
  1. Cook the Ground Beef:
  • Heat vegetable oil in a large skillet or wok over medium-high heat.
  • Add the minced garlic and ginger, and sauté for about 30 seconds until fragrant.
  • Add the sliced onion and bell pepper (if using), and cook for 2-3 minutes until softened.
  • Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned and cooked through, about 5-7 minutes.
  1. Combine Everything:
  • Once the beef is cooked, drain any excess fat if necessary, and pour the prepared sauce over the beef mixture. Stir to combine.
  • Add the cooked noodles to the skillet and toss everything together until the noodles are well coated and heated through.
  • If you like a thicker sauce, add the cornstarch mixture and stir until the sauce thickens.
  1. Serve:
  • Serve hot, garnished with chopped green onions.

Tips:

  • Feel free to customize this recipe by adding vegetables like broccoli, carrots, or snap peas.
  • You can use ground turkey or chicken for a lighter version.
  • Adjust the level of sweetness or spiciness to suit your taste.
