Ingredients
For the Dough:
- 4 cups all-purpose flour
- 1 packet (2 1/4 teaspoons) active dry yeast
- 1 cup milk, warmed (about 110°F or 43°C)
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 3 large egg yolks
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt

- 2 cups walnuts, finely ground
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/2 cup milk (or enough to create a paste)
- Optional: zest of 1 lemon or orange for added flavor
For Assembling:
- 1 egg (for egg wash)
Instructions
- Prepare the Dough:
- In a small bowl, dissolve the yeast in the warmed milk with a pinch of sugar. Let it sit for about 5-10 minutes until frothy.
- In a large mixing bowl, combine the flour, remaining sugar, salt, softened butter, egg yolks, and vanilla extract. Once yeast is frothy, add it to the mixture.
- Mix together until a dough forms. Knead the dough on a floured surface for about 5-10 minutes until smooth and elastic.
- Place the dough in a greased bowl, cover it with a kitchen towel or plastic wrap, and let it rise in a warm place for about 1-2 hours, or until doubled in size.
- Prepare the Nut Filling:
- In a bowl, combine the ground walnuts, sugar, and vanilla extract. Gradually add milk to achieve a thick, spreadable paste. If desired, add citrus zest for flavor.
- Assemble the Rolls:
- Preheat your oven to 350°F (175°C).
- Once the dough has risen, punch it down and divide it into two equal parts.
- Roll out each piece of dough on a floured surface into a rectangle, about 1/4 inch thick.
- Spread the nut filling evenly over the dough, leaving a small border around the edges.
- Starting from one edge, carefully roll the dough into a log, sealing the edges well.
- Place each roll seam-side down on a baking sheet lined with parchment paper.
- Egg Wash and Bake:
- Beat the egg and brush it over the tops of the rolls for a shiny finish.
- Bake in the preheated oven for about 30-35 minutes, or until golden brown.
- Cool and Slice:
- Allow the nut rolls to cool before slicing them into pieces. They can be enjoyed warm or at room temperature.
