Midnight Holiday Cheesecake
Ingredients:
Crust:
- 1 ½ cups chocolate cookie crumbs (such as Oreos)
- ½ cup unsalted butter, melted
- ¼ cup sugar
Filling:
- 3 (8 oz) packages cream cheese, softened
- 1 cup sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- ½ cup sour cream
- ½ cup heavy cream
- 1 cup semi-sweet chocolate chips (melted)
Topping:
- Whipped cream (for garnish)
- Chocolate shavings or cocoa powder (optional)
- Fresh berries (optional)
Instructions:
- Preheat the Oven: Preheat your oven to 325°F (160°C).
- Make the Crust: In a medium bowl, combine chocolate cookie crumbs, melted butter, and sugar. Mix until well combined. Press the mixture into the bottom of a 9-inch springform pan evenly. Bake in the preheated oven for about 10 minutes, then remove and let it cool.
- Prepare the Filling: In a large bowl, beat the softened cream cheese until smooth. Gradually add sugar and continue to beat until creamy. Mix in the vanilla.
- Add Eggs: Add the eggs one at a time, mixing well after each addition. Make sure to scrape down the sides of the bowl as needed.
- Incorporate Sour Cream and Heavy Cream: Fold in the sour cream and melted chocolate until smooth and fully combined.
- Bake the Cheesecake: Pour the filling over the cooled crust in the springform pan. Bake for 50-60 minutes or until the edges are set but the center still has a slight jiggle.
- Cool Down: Turn off the oven and leave the cheesecake inside with the door slightly ajar for 1 hour. This helps to prevent cracking. Afterward, cool completely at room temperature, then refrigerate for at least 4 hours or overnight.
- Serve: Before serving, top with whipped cream, chocolate shavings or cocoa powder, and fresh berries if desired.
