OVEN-ROASTED CHICKEN WITH POTATOES
Oven-roasted chicken with potatoes is a comforting, hearty, and classic dish that brings warmth to any family table. INGREDIENTS FOR OVEN-ROASTED CHICKEN WITH POTATOES
- 4 chicken breasts or thighs (bone-in or boneless)
- 1 kg baby potatoes, halved
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1 tablespoon fresh rosemary (or 1 teaspoon dried)
- 1 tablespoon fresh thyme (or 1 teaspoon dried)
- 1 teaspoon paprika
- 1 lemon (juice and zest)
- Salt and black pepper, to taste
INSTRUCTIONS FOR OVEN-ROASTED CHICKEN WITH POTATOES
- Preheat oven to 400°F (200°C).
- Wash and halve the baby potatoes. Pat chicken dry with paper towels.
- In a bowl, mix olive oil, garlic, rosemary, thyme, paprika, lemon juice, lemon zest, salt, and pepper.
- Coat chicken and potatoes with the marinade. Let rest for 10 minutes.
- Place chicken and potatoes in a baking dish, skin side up for chicken if using bone-in.
- Roast in the oven for 45–55 minutes, or until chicken is cooked through (internal temperature 165°F / 75°C) and potatoes are golden and tender.
- If desired, broil for 2–3 minutes for extra crispiness.
- Remove from oven, let rest for 5 minutes, and serve hot.
