Pecan Pie Cobbler Recipe

Ingredients

For the Cobbler Topping:

  • 1 cup all-purpose flour
  • 1 cup granulated sugar

Instructions

  1. Preheat the Oven:
    Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. Make the Cobbler Topping:
    In a mixing bowl, whisk together the flour, granulated sugar, baking powder, and salt. Then add the milk, melted butter, and vanilla extract. Stir until just combined. The batter will be somewhat thick.
  3. Prepare the Filling:
    In another bowl, mix together the brown sugar, corn syrup, eggs, melted butter, and vanilla extract until smooth. Stir in the pecan halves.
  4. Assemble the Cobbler:
    Pour the cobbler batter into the prepared baking dish, spreading it evenly. Then gently pour the pecan filling over the batter. Do not stir or mix – it’s meant to remain layered.
  5. Bake:
    Bake in the preheated oven for 45-55 minutes, or until the top is golden and the filling is set. A toothpick inserted in the center should come out with moist crumbs but no wet batter.
  6. Cool and Serve:
    Allow the cobbler to cool for at least 15-20 minutes before serving. It can be served warm on its own or topped with whipped cream or vanilla ice cream.
