Quick Oatmeal Banana Pancakes

Ingredients

  • 1 cup rolled oats (or quick oats)
  • 1 medium ripe banana
  • 1 large egg
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ½ teaspoon vanilla extract (optional)
  • ½ cup milk (or non-dairy milk; adjust for desired consistency)
  • Coconut oil or butter (for cooking)

Instructions

1. Blend the Ingredients:

  • In a blender or food processor, add the rolled oats, banana, egg, baking powder, salt, vanilla extract, and milk. Blend until smooth. The mixture should be thick but pourable. If it’s too thick, you can add a little more milk.

2. Preheat the Pan:

  • Heat a non-stick skillet or frying pan over medium heat. Add a little coconut oil or butter to coat the pan.

3. Cook the Pancakes:

  • Pour about ¼ cup of batter onto the heated skillet for each pancake.
  • Cook for 2-3 minutes until you see bubbles forming on the surface. Carefully flip and cook for another 1-2 minutes until golden brown.
