Slow Cooker Amish Sweet Corn Pudding

Ingredients:

  • 2 (15-ounce) cans of sweet corn, drained (or 3 cups of fresh or frozen corn)
  • 1 cup of condensed cream of corn soup
  • 1 cup of milk
  • 3 large eggs
  • 1/2 cup of sugar
  • 1/4 cup of melted butter (or margarine)
  • 1 teaspoon of vanilla extract
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • Optional: 1 cup of shredded cheddar cheese for added flavor

Instructions:

  1. Prepare the Slow Cooker: Lightly grease the inside of your slow cooker with cooking spray or butter to prevent sticking.
  2. Combine Ingredients: In a large mixing bowl, combine the sweet corn, cream of corn soup, milk, eggs, sugar, melted butter, vanilla extract, salt, and pepper. If you’re adding cheese, include it at this time as well. Mix until well combined.
  3. Pour into Slow Cooker: Pour the mixture into the greased slow cooker, spreading it evenly.
  4. Cook: Cover and cook on low for 5 to 6 hours, or on high for 2 to 3 hours, until the pudding is set and a toothpick inserted in the center comes out clean.
  5. Serve: Once cooked, let it cool for a few minutes before serving. The pudding can be enjoyed warm as a side dish or dessert.

Tips:

  • To enhance the flavor, you can add some chopped green onions or bell peppers.
  • This dish pairs well with fried chicken, ham, or grilled meats.
