THE ULTIMATE CRUSTY DUTCH OVEN BREAD: Artisan Loaves at Home!
Ingredients
- Bread Dough:
- 3 cups (375g) all-purpose flour or bread flour
- 1 1/2 teaspoons salt
- 1/2 teaspoon instant yeast
- 1 1/2 cups (360ml) lukewarm water (about 100°F or 37°C)

Instructions
Step 1: Prepare the Dough
- Mix Dry Ingredients:
In a large mixing bowl, combine the flour, salt, and instant yeast. - Add Water:
Gradually pour in the lukewarm water, stirring with a wooden spoon or spatula until a shaggy dough forms. Make sure all the flour is incorporated. The dough will be sticky and rough. - First Rise:
Cover the bowl with a kitchen towel or plastic wrap and let it rise at room temperature for 8-12 hours, or until the dough has roughly doubled in size and is bubbly on the surface. A good time to start this is in the evening so it can rise overnight.
Step 2: Shape the Dough
- Preheat the Oven:
About 30 minutes before you’re ready to bake, preheat your oven to 450°F (230°C) with your Dutch oven (including the lid) inside. This helps achieve that perfect crust. - Shape the Dough:
Once the dough has risen, turn it out onto a floured surface. With floured hands, gently fold the dough over itself a couple of times to form a rough ball. Be careful not to deflate it too much. Use a bench scraper if necessary. - Second Rise:
Place the shaped dough on a piece of parchment paper (for easy transfer) or directly on the floured surface. Cover with a towel and let it rest for 30-60 minutes, or until slightly puffy.
Step 3: Bake the Bread
- Transfer to Dutch Oven:
Carefully remove the preheated Dutch oven from the oven. If you used parchment paper, you can lift the dough using the edges of the parchment and place it directly into the Dutch oven. If not, gently place the dough into the hot Dutch oven (be cautious of the heat). - Add Lid and Bake:
Cover the Dutch oven with its lid and return it to the oven. Bake for 30 minutes with the lid on, trapping steam to help with crust development. - Finish Baking:
After 30 minutes, remove the lid and bake for an additional 15-20 minutes, until the bread is deeply golden brown and crusty. - Cool:
Once done, carefully remove the bread from the Dutch oven and transfer it to a wire rack to cool before slicing. This step is crucial as it allows moisture to escape and prevents sogginess.

- Flavor Variations: You can add herbs, garlic, or cheese to the dough for different flavors.
- Storage: Store the cooled bread in a paper bag at room temperature for up to three days. It can also be frozen for longer storage; wrap it well to prevent freezer burn.
