Yorkshire Puddings

Ingredients:

  • 140 grams (1 cup) all-purpose flour
  • 4 large eggs
  • 200 milliliters (about ¾ cup + 1 tablespoon) milk
  • Salt to taste
  • Vegetable oil or beef drippings (for the baking tin)

Instructions:

  1. Prepare the Batter:
  • In a mixing bowl, sift the flour and add a pinch of salt.
  • In another bowl, whisk together the eggs and milk.
  • Gradually pour the egg and milk mixture into the flour, whisking continuously until the batter is smooth. Let it rest for about 30 minutes.
  1. Preheat the Oven:
  • Preheat your oven to 220°C (428°F).
  1. Prepare the Baking Tin:
  • Add about 1 tablespoon of vegetable oil or beef drippings into each compartment of a muffin tin or a Yorkshire pudding tray.
  • Place the tin in the hot oven for about 10 minutes until the oil is very hot and just smoking.
  1. Bake the Yorkshire Puddings:
  • Carefully remove the hot tin from the oven. Quickly pour the rested batter into the compartments, filling them about halfway.
  • Return the tin to the oven and bake for 20-25 minutes, or until the Yorkshire puddings have risen and are golden brown. Avoid opening the oven door during the first 20 minutes, as this can cause them to collapse.
  1. Serve:
  • Once cooked, remove the Yorkshire puddings from the oven and serve immediately, ideally alongside roast beef and gravy.

Tips:

  • For extra flavor, you can use beef drippings instead of vegetable oil.
  • Ensure your batter is mixed well and rested; this helps create the light, airy texture.
  • If they don’t rise as expected, check that the oven temperature is accurate.
